The course

The one day course is open to anyone wishing to improve their food safety knowledge, from food business owners and workers to residents who want to maintain food hygiene in their own kitchen.

  • Introduction to food safety
  • The law
  • Food safety hazards
  • Taking temperatures
  • Refrigeration, chilling and cold holding of foods
  • Cooking, hot holding and re-heating of foods
  • Food handlers
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment

CockroachesAt the end of the course candidates will sit a short multiple choice exam and will be awarded with a certificate if they are successful.
