Hygiene and Structure

These elements of the rating relate to how well the premises were complying with food hygiene legislation and best practice. Each premises is scored twice. One score is given for compliance with structural requirements that includes cleaning. A second score is given for compliance with hygiene requirements which relates mainly to food handling practices.

The food hygiene and safety procedures and the structure of the premises should be assessed separately using the scoring system below.

The score should reflect compliance observed during the inspection according
to the guidance set out below. Adherence to any relevant UK or EU Industry Guide to Good Hygiene Practice should be considered when assessing
compliance.

Guidance on the Scoring System
25Almost total non-compliance with statutory obligations.
20General failure to satisfy statutory obligations – standards generally low.
15Some major non-compliance with statutory obligations – more effort
required to prevent fall in standards.
10Some non-compliance with statutory obligations and industry codes of recommended practice. The premises are in the top 50 per cent of premises and standards are being maintained or improved.
5High standard of compliance with statutory obligations and industry codes of recommended practice, minor contraventions of food hygiene regulations. Some minor non-compliance with statutory obligations and industry codes of recommended practice.
0High standard of compliance with statutory obligations and industry codes of recommended practice; conforms to accepted good practices in the trade.
